DESSERT PIZZA
KYS original recipe
A dessert pizza made with creamy vanilla custard, fresh berries, honey, and grated chocolate on a soft, moist crust.
Dough
- 1 kg Caputo Pizzeria
- 600 g water (63% hydration)
- 50 g melted butter
- 180 g of sugar
- 20 g salt
- 5 g fresh yeast
- Let rise at room temperature for 3 hours.
- Refrigerate for 24-48 hours before use.
Topping
- Vanilla sauce
- Strawberries and blueberries
- Honey
- Grated chocolate
- Powdered sugar
Cooking time:
- 3-5 minutes in a pizza oven that holds 300-350 degrees.
- Or 5-7 minutes in a normal oven at 250-300 degrees.
Instructions
Use cold water and flour that has been kept in the fridge overnight or longer. Add all the water to the mixing bowl and add the yeast, flour, salt, and sugar.
Start the machine at medium-low speed and let it run for about 5 minutes, then increase the speed slightly and add a little of the liquid butter. After 15–20 minutes, the dough should reach a temperature between 22 and 24°C; at that point, it is fully kneaded.
Take the dough out and tighten it, then let it rest for about 30 minutes on the kitchen counter, covered with a damp apron so the dough doesn’t form a dry skin that can crack when shaping pizza balls. When the dough has rested, divide it into 250 g pieces and shape them into pizza balls.
You then place the pizza balls in a proofing box or similar, cover them, and let the dough rise for 3 hours at room temperature. After 3 hours, put the dough in the fridge and let it rise overnight. The dough can be used between 18 and 48 hours. The dough is used directly from the fridge while it is cold. It is important not to go above 350°C when baking the pizza, as there is a lot of sugar in the dough, which can burn and create a bitter taste.
Vanilla sauce
This sauce is sweet, velvety, and smooth, with a nice consistency for use as a pizza sauce. It has plenty of flavor and harmonizes well with the other ingredients.
- 500 g vanilla cream
- 250 g condensed milk
- 100 g cream
Mix all the ingredients well with a whisk or in a food processor. Leave the sauce in the fridge for 1–2 hours before use or overnight. The custard is used straight from the fridge so it is cold when applied to the pizza before it goes into the oven. After baking, the berries, honey, powdered sugar, and grated chocolate are added.
