Welcome to KYS Pizza Course! This course is a simple yet comprehensive guide that will teach you the essentials of making authentic Italian pizza. We will take you through the following points:
A perfect pizza starts with a flavorful base – light and airy, with a thin and crispy crust. To achieve this, there are four key factors to consider: choice of flour, kneading, proofing, and temperature. These elements, combined with the right amount of liquid, yeast, and proofing time, will determine the outcome.
The art of stretching pizza dough requires precision to achieve optimal results. Air should be pushed from the center out towards the edges before stretching the dough to the desired size. A classic Italian pizza typically has a diameter of 30-35 cm and weighs between 230-280 grams.
The right amount and type of toppings are crucial for the ultimate taste experience. Well-balanced combinations of fresh and simple ingredients create harmony and purity in flavor, making every bite unforgettable.
Both oven and dough temperature play a vital role in the outcome of the pizza. For a perfect crust, the dough and tomato sauce should be at room temperature before baking, especially in an oven reaching temperatures of 450 to 500 degrees Celsius. However, you can also make pizza directly from the refrigerator, but be aware that the crust may be unevenly cooked.
The quality of ingredients is crucial to the outcome. Thanks to increased interest in pizza making, it is now easier than ever to obtain authentic Italian products. From fresh buffalo mozzarella to San Marzano tomatoes, you have access to everything you need to make the perfect pizza.
