Dessert pizza

KYS original recipe

A dessert pizza made with creamy vanilla custard, fresh berries, honey, and grated chocolate on a moist soft crust.

Dough

1 kg Caputo Pizzeria

600 g water 63% hydration

50 g melted butter

180 g of sugar

20 g of salt

5 g fresh yeast

Let rise at room temperature for 3 hours.

Refrigerate for 24-48 hours before use.

Topping

– Vanilla sauce

– Strawberries and blueberries

– Honey

– Grated chocolate

– Powdered sugar

Cooking time:

3-5 minutes in a pizza oven that holds 300-350 degrees.

Or 5-7 minutes in a normal stove at 250-300 degrees.

Instructions

Use cold water and flour that has been in the fridge overnight or longer.Add all the water to the baking bowl and add the yeast, flour, salt and sugar.

Start the machine on medium low speed and let it run for about 5 minutes, then you can increase the speed a little and add a little bit of the liquid butter.After 15-20 minutes, the dough should have a temperature between 22-24 degrees, then the dough is finished kneading.

Take the dough out and tighten it up and leave it to rest for about 30 minutes on the kitchen counter covered with a damp apron so that the dough does not get a dry thin skin, which cracks when you make the pizza balls. When the dough has rested, divide it into 250 g pieces and make pizza balls.

You then place the pizza balls in a raised box or similar to cover and let the dough rise for 3 hours at room temperature. After 3 hours, put the dough in the fridge and let it rise overnight. The dough can be used between 18-48 hours. The dough is used directly from the fridge, while it is cold. It is important not to go above 350 degrees when frying the pizza, there is a lot of sugar in the dough, this will then burn and give a bitter taste.

Vanilla sauce

This sauce is sweet, velvety smooth and has a nice consistency for use as a pizza sauce, it has lots of flavor and harmonizes well with the other ingredients.

– 500 g vanilla cream

– 250 g condensed milk

– 100 g of cream

Mix all the ingredients well with a whisk or in a food processor. Leave the sauce in the fridge 1-2 hours before use or overnight. The custard is used straight from the fridge so it is cold when applied to the pizza, before it goes into the oven. After roasting, the berries, honey, powdered sugar and grated chocolate are applied.
